Sweet potato wedges

Ingredients

  • 2 sweet potatoes, cut into thin wedges

  • olive oil

  • salt

  • pepper

  • 1 tablespoon(s) oregano


For the yogurt sauce

  • 200 g strained yogurt

  • 1 teaspoon(s) paprika

  • salt

  • pepper



Method

  • Preheat oven to 220* C (390* F) Fan.

  • Wash the sweet potatoes.

  • Cut them into wedges.

  • Combine all of the ingredients in a large bowl. Add wedges and toss.

  • Transfer to a baking pan lined with parchment paper.

  • Bake for 20-30 minutes, until golden brown.


For the yogurt sauce:

  • Combine yogurt, paprika, salt and pepper in a bowl. Mix until creamy.

  • Serve sweet potato wedges with yogurt sauce.
