Watermelon cake

Ingredients
1 large whole watermelon
1 large tub coconut yoghurt
2 tbsp maple flavoured syrup
1 cup sliced almonds
2 kiwi, sliced
1 punnet strawberries, halved
1 punnet raspberries
1 punnet blueberries
3 passionfruit
1 bunch mint
1 honeydew melon
Method
Top and tail trim the watermelon (so steady on a work surface).
Remove the rind with a knife.
Pat melon dry with paper towels and place on your serving dish.
Whisk coconut yoghurt with maple flavoured syrup. Spoon coconut yoghurt on the top of the watermelon.
Decorate with fruit and mint. You could use a melon baller or different shaped cookie cutters for interesting patterns and shapes.
