Wraps of fresh goat cheese, mango and avocado

Ingredients
300 g of fresh goat cheese
6 tortillas
2 mangoes
6 sprigs of coriander
a few pinches of espelette pepper (chilli pepper)
salt
The guacamole avocado sauce
3 avocados
2 lemons green
1/2 onion
3 pinches of paprika
salt
Preparation
Guacamole-style avocado sauce
1. Peel the avocados. Roughly detail their flesh and place it in a bowl. Mash with a fork. Add the juice of the limes. Peel the onion, slice it very finely. Add it to the avocados, salt and sprinkle with paprika. Book.
Wraps
1. Peel the mangoes and cut them into long sticks. Chop the cilantro. In a bowl, mix the goat cheese with the cilantro. Add a few pinches of Espelette pepper and salt lightly.
2. Divide the avocado sauce over the tortillas. Arrange a few mango sticks and finish by adding the cheese. Roll the tortillas and cut them in half. Close with a wooden spike. Serve immediately.
